Chicken in Jelly

A little cold chicken (about one pint)
one cupful of water or stock
one-fifth of a box of gelatine
half a teaspoonful of curry powder
salt
pepper

Cut the meat from the bones of a chicken left from dinner. Put the bones on with water to cover, and boil down to one cupful. Put the gelatine to soak in one-fourth of a cupful of cold water. When the stock is reduced as much as is necessary, strain and season. Add the curry and chicken. Season, and simmer ten minutes; then add the gelatine, and stir on the table until it is dissolved. Turn all into a mould, and set away to harden. This make a nice relish for tea or lunch. If you have mushrooms, omit the curry, and cut four of them into dice. Stir into the mixture while cooking. This dish can be varied by using the whites of hard-boiled eggs, or bits of boiled ham. To serve: Dip the mould in warm water, and turn out on the dish. Garnish with parsley.

Chicken Cutlets

Season pieces of cold chicken or turkey with salt and pepper. Dip in melted butter; let this cool on the meat, and dip in beaten egg and in fine bread-crumbs. Fry in butter till a delicate brown. Serve on slices of hot toast, with either a white or curry sauce poured around. Pieces of cold veal make a nice dish, if prepared in this manner.

Chicken a la Creme

Two tablespoonfuls butter, 2 tablespoonfuls flour, salt, 1 1/2 cups chicken (cubes), 1/2 cup mushrooms, 1 pimento, chopped. Cook and serve on toast.

EASY OVEN CHICKEN

Put raw chicken pieces (one chicken) in glass plan or casserole. Sprinkle with salt and pepper (other seasonings--curry or nutmeg etc. if so desired) and toasted almond slivers. Mix 1 can of Cream of Chicken or Cream of onion soup in bowl with 1/4 cup of dry white wine. Mix and pour over chicken. Add more nuts and shake on Parmeson Cheese to your taste. For two chickens double soup and wine. Bake one hour at 350° or until nice and brown.

WILD RICE & CHICKEN

WILD RICE & CHICKEN image

1 box Uncle Ben's Long Wild Rice
1 Can Mushroom Soup
1 Can Chicken Soup
1 Can Water
1 Can Mushrooms
1/2 pkg. onion Lipton Soup Mix

Mix ingredients - pour into 9 x 13 pan. Place chicken parts over rice mixture, seal with aluminum foil. Bake at 350° for 2 hours.

Pressed Chicken

Two chickens boiled tender, chopped not too fine, add the liquor they were boiled in, season with salt' and pepper, add a few tablespoons of rolled cracker; mix all together. Boil four or five eggs hard; put in a mold a layer of chicken and one of sliced egg until the mold is full; press by putting a weight on top. Beef or veal can be prepared the same way.

Broiled Chicken

Clean and split open the chicken, and lay it on the gridiron over a clear fire. Sprinkle with salt and pepper, and spread with the best fresh butter, and serve on a hot platter, with a few sprigs of watercresses around it. Serve lettuce salad with it.

Chicken Cheese

Two chickens boiled tender, chopped (not too fine), and seasoned with salt and pepper. Boil three or four eggs and slice, with which line molds and pour in the chicken, and add the liquor they were boiled in. Slice cold.

Chicken Pot Pie

Prepare and cook chickens until within twenty minutes of b eing done; prepare a dough as for biscuit, and roll and cut in small squares; place in a steamer over boiling chicken, and steam. When done remove and prepare chicken as for fricassee, and serve.

Fricasseed Chicken

Cut up chicken, wash ; then put in a kettle in cold water, enough to cover, and cook until tender. Then season with pepper, salt and butter, and thicken with a little flour made smooth with water.
