Lemon and Orangeade

One and a half dozen lemons, 1/2 dozen oranges, 3 pounds sugar, 1 pint bottle logan berry juice, 2 cans pineapple. Make syrup by boiling sugar with 1 pint water. When cool add juice of lemons and oranges, pineapple and logan berry juice. Strain and add 1 1/2 gallons ice water. Serves about 60 people.

Chocolate

One and a half squares of unsweetened chocolate, 1/4 cup sugar, pinch of salt, 1 cup boiling water, 3 cups milk. Scald milk, melt chocolate in small pan over hot water; add sugar, salt and boiling water; boil 1 minute. Add to scalded milk and whip with dover beater. Serve with whipped cream.

Tea

Always use fresh boiling water to pour over tea. Do not allow tea to boil or stand a long time on stove. One teaspoonful of tea for each person and one for the teapot is the general rule.

Ice Tea Punch

One quart of cold black tea, juice of 1 lemon, juice of 1 quart of fresh strawberries, 1 pint of small pieces of ice. Add sugar and water to taste. Taste and make your wish for a second glassful.

WEDDING PUNCH

2 doz. lemons - strain juice
2 lbs. sugar
1/2 pt. green tea, strained
1 qt. Brandy
3 qts. Claret

Mix together. Cover. Keep over night. To serve, add Champagne to taste, usually one bottle per bowl.

Lemonade and Egg Albumen

Stir the whites of 2 eggs, 2 teaspoons of sugar, the juice of 1 lemon, until the sugar is well mixed. Add cup of cold water, strain into a tumbler and serve at once.

Brandy Milk with Eggs

Heat some milk in a granite saucepan for 1/2 hour to sterilize it, but do not boil, then set aside to cool. Beat 1 egg with 1 teaspoon of sugar, enough to mix well. Add to this 2 tablespoons brandy and cup of the cold milk. Strain into a tall slender glass and serve at once.

Grape Juice

To 3 qts. fresh, ripe, juicy grapes, freed from the stems, put 1 qt. water, no sugar. Let come slowly to a boil, and when the whole mass is boiling hot strain the juice through cheese cloth. Then return liquor to the fire, and as soon as it arrives at boiling point again, can it in glass jars. An excellent and refreshing drink.

Iceland Moss

Take 1 oz. Iceland moss, wash and boil in 1 qt. water until it is reduced to 1 pt. Then strain and add 1 lb. white sugar and the juice of 2 lemons. Very palatable, and can be used as freely as desired. Excellent for a cough.

Foam Coffee

When the patient is tired of plain coffee, it is sometimes rendered more palatable by pouring the hot coffee into a well beaten egg just before serving.
