Subtly gluten free submitted by cannonsr on August 25, 2016, 8:11am This isn't marketed as a gluten-free cookbook, but it functions as one. (I didn't notice any wheat flour in the recipes.) Instead of trying to recreate gluten flour recipes without it, it explores various flours--rice, buckwheat, corn, coconut, sorghum--figuring out how to best show off each. I appreciated the encouragement to play with my flours. Needed to return my copy eventually, but expect I'll be purchasing this one soon.
